&lt;p&gt; I agree with the inspection results but have since carried out the following improvements:&lt;/p&gt; &lt;p&gt; The establishment has been thoroughly cleaned and procedures are in place to ensure that cleanliness is maintained.&lt;/p&gt; &lt;p&gt; The staff have been trained/re-trained/given instruction/are under revised supervisory arrangements.&lt;/p&gt; &lt;p&gt; Our rating was affected by several temporary circumstances that do not reflect our standard operations:&lt;/p&gt; &lt;p&gt; The chiller room light was faulty&lt;/p&gt; &lt;p&gt; Temperature readings were taken during the defrost cycle&lt;/p&gt; &lt;p&gt; We had temporarily run out of juice labels (stock issue)&lt;/p&gt; &lt;p&gt; There was a miscommunication regarding food preparation procedures in the downstairs kitchen&lt;/p&gt; &lt;p&gt; Temperature chart was misplaced outside the folder for the month of November.&lt;/p&gt;
