<p> I agree with the inspection results but have since carried out the following improvements</p> <p> &nbsp;</p> <ul> <li> The establishment has been thoroughly cleaned, and procedures are in place to ensure that cleanliness is maintained.</li> <li> A new management and control system has been implemented.</li> <li> The kitchen has been reorganised and new equipment purchased.</li> <li> All kitchen staff have been informed of the changes and the need for strict obeyance of the standards.</li> <li> A new internal kitchen auditing system, Trail is being introduced to ensure standards are maintained on an ongoing basis and to ensure staff co-operation.</li> <li> Ongoing training of all staff on hygiene, allergens and best practice has been implemented</li> <li> A new Senior Sous chef has been employed to support the head chef, enforce standards and help educate all kitchen staff.
