What a low food hygiene rating means
The food hygiene rating runs from 0 to 5. A 0 means urgent improvement is necessary; a 1 or 2 means improvement is needed. It reflects the standards found at the last inspection, hygiene, the condition of the premises, and how well the business manages food safety, and it is not a closure order. A business can be rated low and still trading while it puts things right.
